The walled city of Soave in the Veneto region is the source (and namesake) of one of the great classic Italian white wines. The town dates from Roman times, and so does the winemaking tradition. The Romans were big fans of minerally, floral wines like those of Soave. The Garganega grapes, that for many centuries have produced Soave wines, come mainly from vineyards in the hills that rise behind the town and march northwestward toward the eastern Valpolicella. This area is now known as Soave Classico and is still the source of the best wines of the denomination due to the hills’ volcanic soils.
A traditionally made Soave, sourced from Garganega vines more than 40 years old. Introduced to the area by the Romans, these pergola-trained vines are planted on the volcanic soils of Monte Foscarino. Fermented in used barriques, with about 12 hours on the skins, and batonnage is used to give more texture to the finished wine. An intense yellow colour, with a fuller-body, this is a rich and beautifully textured wine. Aromas of stone fruits, almonds, and white flowers pair nicely with cod with polenta, and sushi.
About Inama...
From the 1960s Inama have acquired top parcels in the heart of both Soave Classico and Colli Berici. The last few years have seen this estate become as recognised for its reds as it had been for its whites. Bradisismo, a blend of Cabernet Sauvignon and Carmenère reflects Stefano’s new approach to vinification. With the grapes harvested at optimal maturity a cool fermentation is all that’s required to extract the necessary polyphenols whilst more complex aromatics are preserved. Stef now uses this technique for all his reds including the cocoa and soy sauce-tinged Carmenère Più.
The whites continue to define the Soave terroir. Soave Classico and Vigneti di Foscarino are both excellent and seem to improve further with every vintage. The Vulcaia Sauvignon is a magnificent creature with a captivating nose of yellow plum, hints of pineapple, and a mineral edge all wrapped up in a crisp and blissfully oak-free package. The Vulcaia Fumé is treated to 30% new French oak, just what the tropical waxy fruit requires.
