Pazo Señorans is made with 100% Albariño grapes that grow on 35-year old vines in 20 acres of lovingly cared vineyards that receive the sea breeze from the Atlantic Ocean. Upon arrival at the winery, grapes are destemmed and crushed in a pneumatic press where they undergo a quick decantation and short maceration.
Tasting: Some leesy and nutty hints hide among the wine's bright fruit flavours: peach, yellow apple, and dried tropical fruits. The lees contact pushes those yellow apples into riper red apple flavours, along with a toasted almond note. This is a very interesting version of a grape many people wouldn't necessarily recognize in this guise.

Jersey Oysters and Champagne, oh definitely!! However there are other excellent combinations like a classic Chablis, a crispy Vinho Verde or an Albarino. One of our favourite pairings is this particular Albarino full of mineral, salty and stone fruit flavours which complements the oysters and cleans the palate beautifully.
