Blended specifically for Sushi and Sashimi, Gyotaku was created through the marriage of a French Winemaker and a Japanese Chef. This wine is aromatic, dry and fresh to complement fish, with enough character to stand up to soy and wasabi. "Gyotaku" is a traditional Japanese art created with fish, ink and paper. Christophe Mittnacht and his cousin Marc run this 23 hectare farm based around Hunawihr and Ribeauvillé according to biodynamic principals, and are now fully converted and certified by Demeter.
Production is around 145000 bottles a year across numerous cuvee and several Grand Cru wines. Their sons too are now involved to carry on the tradition. They use wild yeasts, have farmed organically since 99 and biodynamically since 2003 and limit interventions in the cellar. The wines tend towards the drier style and all have great definition and purity and also excellent prices!

Ageing Potential: Great young and zippy but will age nicely for 5 -8 years.
