Exotic and intriguing; think middle-eastern spices (star anise, clove, cinnamon), lychee and rose petals. To sip, the characters are intriguing and plentiful; nougat, clove, orange, lychee and rose oil. Finishes with a rich, pleasing roundness. Some might say it's totally luscious. Wonderful when paired with dishes featuring fragrant spices, chilli and coconut milk. Equally good with creamy cheeses, pâté or antipasta. In Thai cuisine, spices and sauces are used to create a blend of sweet, sour, hot and salty. Typically, Thai food is notably hot, but is generally moderated for Western palates. With chilli spicy food, a touch of sweetness can help mellow the spice in a dish. A red curry paste based dish is a great match for the lychee and rose notes of a Gewürztraminer such as this one from Little Beauty.
Jasmine rice, enough for two
1 can of coconut milk
2 Chicken breasts, thinly sliced
2 tablespoons of olive oil
3 cloves of garlic, crushed
2 inches of fresh root ginger, peeled and roughly grated
1 fresh red chilli, chopped
1 medium onion, thinly sliced
3 tablespoons of oyster sauce
1 tablespoon light soy sauce sauce
1 tablespoon of fish sauce
1 tablespoon of brown sugar
7 - 8 button mushrooms, thinly sliced
7 - 8 florets of broccoli (halved if necessary)
1 red and 1 yellow pepper, thinly sliced
Bunch of fresh coriander, roughly chopped
Juice of one lime
Rinse the rice under cold running water until water runs clear. Drain. Bring a saucepan, with one cup of water in it, to the boil. Add a pinch of salt, the rice and the coconut milk. Bring to the boil and reduce to a simmer until rice is cooked.
Meanwhile, heat a large pan or wok, add the olive oil. Add the crushed garlic, grated ginger and chopped chilli. Cook for 2-3 minutes, add the sliced Chicken and cook for a further 2-3 minutes. Add all of the remaining ingredients, starting with the sauces, followed by the vegetables. Stir-fry for a further 3 - 4 minutes.
When the rice is cooked, drain. To serve, combine the rice and chicken, garnish with fresh coriander and a squeeze of fresh lime.
