Christophe Drouard makes classic Muscadet from 16 hectares of vines with an average age of 35 years situated on silican clay around the commune of Monnières. The wine is vinified at 21°in underground glass-lined vats, the malolactic fermentation being disallowed, and the wine rests on its lees (sur lie) throughout the winter. The wine is not fined and just receives a light filtration prior to bottling. The wines are chosen almost every year by the syndicate of Muscadet growers to represent the 'Finest of Muscadet Sur Lie'.
His wines are highly recommended as they are clean, fruity, well balanced and finish with a lovely softness.
