Florent Rouve is one of many that wasn’t born into winemaking. His father was a geologist which led to a natural interest in nature. After the family moved to the Jura area, he took on a job working as a forest manager nearby several vineyards. The interest in viticulture bloomed and the rest is history. Florent got his feet wet working with Jean Rijckaert where he continued a minimalist style of winemaking. He then moved on to his own label. Currently, he makes wines in the Jura and Macon regions constantly improving his spirit of tradition and modernism.
Vin Jaune means yellow wine and refers to the Jura’s classic tradition of oxidizing the Savignin sous la velle, or under the veil. This wine comes from the Cotes du Jura and will spend six years in barrique before its release. The oxidizing process will concentrate the nutty flavors, giving the wine texture and preserving its acidity. It’s a beautiful wine to behold. It will do well with many foods, including monkfish, chicken with morels, or aged cheeses like Comte. Perhaps its best known use is the base for the rich “sauce Vin Jaune” that bathes white fish and chicken dishes.
