Arguably the new darling of the trade, Picpoul has become a real luvvy wine for many and there’s nothing wrong with that. In all seriousness, this is the best example we’ve ever tasted because it goes well beyond the charming freshness and linear minerality that most offer de rigueur. This wine has an aromatic profile that brings blackcurrant leaf and spearmint into play alongside the classic lemon-leanness that we all look for. Absolutely bone dry as it ought to be, but with lovely texture and depth and eyebrow-raising length. This comes from our freind Boris Kovac and his winemaker partner David Serodes, from beautiful vineyards overlooking the Med, perched atop the magnificent Thau basin. The only accoutrements required are oysters, oysters, and more oysters.
