Evening Sky is a very yeasy drinking Sake - Mineral, crisp, dry and well-structured. Made with local Menkoina rice polished to 70% this sake is wonderfully delicate, easy-to-drink and mild but grows and develops over time: the more one drinks, the deeper the taste becomes. Evening Sky has wide appeal and food pairing options.
It offers very light and subtle aromas of strawberry and creamy rice. The structure is mineral, crisp and dry whilst the body mild. Acidity seems pronounced due to the dryness but, when warmed, acidity mellows and notes of fresh grass, vanilla and oats develop.
The delicate structure and flavours of this sake make it versatile for food pairings. Chicken, steak, tempura, BBQ, sweet & sticky sauces all match well.
It can be served either cold (5-10C) or warm (40-50C).
Ingredients: rice water, yeast, koji.
