Laurent Guillet has around 14 hectares in total, 12 of which are in the village of Morgon, mainly on the Cote du Py which has schist and volcanic soil. This Morgon Côte du Py is traditionally vinified, with long vatting and light extractions. The goal: to promote the expression of the terroir! The exercise is successful, with a serious, mineral, nicely structured Morgon. A great Beaujolais wine that can be tasted in 5 to 10 years without any problem!
Coq au vin demands for a light to medium-bodied red with soft tannins and good acidity and perhaps a little spice if you like.
The classic coq au vin dish is traditionally served with red Burgundy (like Gevrey Chambertin, Beaune or Pommard) but we would suggest looking beyond Burgundy for better value like German Spätburgunder, Oregon, New Zealand or Tasmania.
Pinot isn’t the only red wine to consider, of course. In general, look for fruit-forward wines with low tannins and relatively good acidity to help lift the dish. A good quality, richer Beaujolais-Villages like this Morgon with its bright red berry fruit and savory element will be perfect to lighten up the dish.
