Description
Clairin Le Rocher is a brand produced in Pignon commune (village) by Bethel Romelus. His Clairin is single pot distilled and made from sugar cane syrup from three varieties of cane as well as from dunder, which is leftover distillate from previous batches.
On the nose the overripe cane gives a very fat and warm organic side, with notes of truffle, olive, and almost smoked meat. The rosemary also brings an oily side, which contributes to this sensation of richness and thickness.
The aeration brings a nice balance, and this wine becomes very soft, while being ample and aromatic. A slight burnt and ashy side is present on the olive, like the memory of a thick and velvety smoke.
The palate is very soft and fluid, and begins its progression with a pinch of slightly green, vegetable spices, like dried herbs. These aromatic herbs then gain in size and concentration, until we reach their oil, their juice, their essence.
The finish is soft and coats the tongue with a slightly astringent tapenade, with copper highlights and cherry stones.
