A vibrant, bittersweet red vermouth. The base recipe is an infusion of several key botanicals including rhubarb root, orange and wormwood. The infusion is blended with English wine and fresh foraged botanicals including nettle, pine and rosemary. The vermouth is then gently sweetened with demerara sugar.
For a perfect aperitif, enjoy over ice with a splash of soda and a wedge of orange or an olive. It’s also a wonderful alternative vermouth in classic cocktails like a negroni or Manhattan.

A 100% post consumer waste recycled glass bottle – a bottle made entirely from used bottles known as wild flint glass. A unique gently tinted new look for recycled glass. Premium and sustainable. Labels made from a by-product of sugar cane manufacturing called Bagasse (95%) and hemp and linen fibres (5%). 100% biodegradable. Glass stoppers made from glass - endlessly reusable and 100% recyclable, including the PET seal ring. Spirits distilled under vacuum which means we eliminate both the use of heavy-duty heating elements to boil liquids and the excessive amounts of wasted water to cool condensers. We proudly partner with Ecologi and we're planting a tree with every order in support of multiple reforestation projects."
Vault Aperitivo and the Revitalisation of English Aperitivo!
We welcomed Vault Aperitivo into the Dunell's portfolio back in late December 2024 and we couldn't be prouder to be working alongside their amazing team!
Hailing from the Essex Market Town of Saffron Walden, founder Dan Joines created Vault as a means to improve the UK's offering of aperitivos and craft spirits.
After 4 years of hard work, Dan was joined by Maire & Max Chater (founders of Victory London Distillery); after which they launched Chater's, a café and aperitivo bar next door to their Saffron Walden distillery.
Now in 2025, Vault proudly boasts a stunning range of English vermouths and aperitivos, from their oyster shell infused Coastal Dry Vermouth to their modern Bitter Aperitivo!
Recently the team at Vault have also delved into the world of RTDs (ready to drink) and non-alcoholic, launching their Pre-Mixed Negroni and their Non-Alcoholic Aperitivo.
