The 2013 Billecart Salmon Brut is a blend of 62% Pinot Noir, 24% Chardonnay and 14% Pinot Meunier, with 85% of the fruit sourced from grand crus and premier crus. After ageing on its lees for more than 7 years, the champagne was released with a very low dosage of 3 grams per litre. Expect a creamy texture, with red fruit notes and a nutty character. This wine, with an extra brut dosage, is dominated by great Pinot Noir flavours which is tempered by the elegance of the Chardonnay from the Côte des Blancs and that signature touch of Pinot Meunier.
APPEARANCE
Pale gold in colour, with glinting flecks of soft yellow and a natural light sparkle.
PALATE
A charming mouthfeel with a delightful tension and notes of blueberries and cherry clafoutis, intensified by the delicate, creamy texture of a slow second fermentation. The wine rises to a distinguished complexity and enjoys a lingering, delicately structured finish.
AROMA
Deliciously fruity intensity with elegant notes of nuts and stone fruits (fresh hazelnuts, pomelo flesh). Prolonged and nuanced development of exquisite notes of baked goods (raw butter, lemon cream). A superlative aroma, with a refreshing and sophisticated purity.
TASTING
A noble and distinctive vintage with excellent depth. Enjoy with bream ceviche, citrus fruits and avocado or pan-fried foie gras, peach, verbena and rhubarb.

With this vintage in particular, there is a majority of Pinot Noir which brings about an elegance and a framework for a great refinement. The Vintage 2007 is the essence of Maison Billecart-Salmon, a champagne which doesn’t go unappreciated; people always remember the Vintage 2007. In my capacity as a sommelier, I like to recommend this wine with a beautiful turbot that has been roasted whole, a fish with a beautiful meaty flesh that is full of flavour. There is a great harmony with the finesse of the Pinot Noir, and a very light austerity which brings about length. The Cuvée Vintage 2007 is also a wine that can be drunk on any occasion. I like to go against tradition and tell myself that we aren’t obliged to reserve champagne just for special events. Just sharing a bottle is reason enough! ”
